At long last, I'm sharing my Dad's fish and chips recipe! He had a chippy in Glasgow when I was growing up and the fish was nothing short of phenomenal. Those of you who remember the piping hot fish and chips in newspaper, doused with lots of vinegar will know what I'm talking about!

Please forgive my long winded post, but fish and chips is really something that's very close to my heart. I want you to understand the background behind the recipe. FYI, my haddock was from Fulton Fish Market (below). It was fantastic fish!
